 BULK UP ON BREAD ALTERNATIVES
The popular lunchtime sandwich is no longer white bread, and peanut butter and jelly. As alternative diets like paleo and keto gain traction, consumers are looking for new ways to enjoy their sandwiches without grains or gluten.
Now, breads containing vegetables are what consumers want. Try out these bread alternatives to create delicious sandwiches on your next lunch menu:
• Cauliflower wraps, and breads. Cauliflower pairs well with lentil salad or making grilled cheese.
• Collard greens and kale leaves - a nutritious spin on the lettuce wrap trend. Remember to remove the stems and lightly
steam the leaves before stuffing them with hummus and chicken or marinated vegetables.
• Zucchini rolls. They’re easy to eat and are low carb. Thinly slice zucchini and fill with tuna salad, chickpea mash or hummus. Roll them up and keep them closed with a toothpick until ready to serve.
• Portabella mushrooms are hearty enough to take the place of hamburger buns. Grill them the same way you would a hamburger bun and top with your choice of patty.
