 Ingredients
• 12 oz whole wheat ziti
• 3-4 cups broccoli florets (1 medium head)
• 1 Tbsp. vegan butter*
• 4 garlic cloves, minced
• 2 Tbsp. whole wheat flour
Directions
• 1/2 cup vegetarian broth*
• 1 cup unsweetened almond milk
• 1/2- 3/4 tsp. salt
• Black pepper to taste
• 3/4 cup GO VEGGIE® Vegan Soy Free OR Original Grated Parmesan Topping
• Optional: 2 Tbsp. nutritional yeast
• To garnish: extra Parmesan, chopped parsley, red pepper flakes, if desired

GO VEGGIE® Vegan Cheese Alternatives are a delicious substitution for ordinary cheese in all of your favorite recipes. You can use our Original or New Soy Free Vegan Parmesan in this delicious Alfredo recipe. It’s a quick and easy way to a more plant-based diet.
• Cook the pasta and broccoli in a large pot of salted water, according to directions on the package. Drain and set aside.
• In the same pot, melt butter over medium heat. Add garlic and flour. Stir until flour has browned, about one minute.
• Whisk in broth and almond milk until smooth. Bring to a boil then reduce heat to medium low. Simmer 6-8 minutes until sauce thickens. Season with salt and pepper.
• Reduce heat to low and whisk in Parmesan cheese. Taste and adjust seasonings as necessary (more salt or pepper or whatever spices you like).
• Gently stir in the pasta and broccoli. Garnish if desired. Enjoy! • Makes 4 servings.
